Vegetarian Bean & Pumpkin Chili
1 1/2lbs dried beans (any variety/mix of beans)
1 1/2tsp cumin
1 1/2tsp chili powder
2tsp coriander
1/2 cinnamon stick
3tsp Himalayan salt
Several dashes of Tabasco
2 serrano chilies (minced)
3″ chipotle chiles in adobo (minced)
1 onion (chopped)
3 garlic cloves (chopped)
1 28oz. can crushed tomatoes
1 15oz. can organic pumpkin puree
2C water
4C vegetable stock
Rinse & soak beans overnight. Place beans in a slow cooker, add all ingredients and stir. Cook on low for 8 hours, or until tender.
